Stuffed Salmon

The Stuffing
- Salmon fillet (tail part) 600g
- Peeled green prawns 150g
- Sun - dried tomatoes 3 - 4 pcs
- Spinach 1/2 bunch
- Parmesan 50g
- Salt 0.5 tsp
- Chilli flakes 0.5 tsp
- Teriyaki sauce 2 tbsp
- Sweet Chilli sauce 2 tbsp
Instructions
- Prepare the Salmon
- Place Salmon on chopping board
- Start from the centre & slice a half a centre metre flap on one side (making sure the flap is still attached)
- Repeat in the other side
- Place in a baking tray
The Stuffing
- Mix 1 tbsp of Teriyaki sauce and 2 tbsp of Sweet Chilli sauce together in a small bowl and put aside
- Finely chop the peeled Green Prawns, Sun - dried tomatoes and Spinach
- Combine with salt, chilli flakes & finely grated Parmesan
- Mix together well
- Place evenly inside the Salmon
- Fold in both flaps of the Salmon
- Baste with the 1 tbsp Teriyaki sauce
- Place in preheated oven on 180C for 20mins
- Remove from the oven
- Baste with the combined mixture of the Teriyaki and Sweet Chilli sauce
