Vegan, Gluten-free, Dairy-free, Refined sugar-free
Ingredients
100g dark chocolate, plus extra for serving
2 ripe avocados
2 tablespoons cocoa powder
2 teaspoons vanilla bean extract
1/4 cup maple syrup
160g coconut cream
Rice whip cream, to serve
Method
Melt dark chocolate over low heat in a saucepan. Stir regularly to prevent overheating. Once the chocolate has melted, set it aside to cool.
Place all remaining ingredients in a high-speed blender and blend until smooth and creamy.
Using a spatula, pour the cooled chocolate into the blender and pulse for a few seconds.
Divide the mixture into separate serving glasses and put in the fridge to chill for 30 minutes.
Once the mousse is ready to serve, spray rice whip cream on top and garnish with chocolate chunks.
